Crisp Italian Chicken with Polenta

Have been extremely busy for the past few days so haven't had much time to update blog, but will put that right soon! My new camera arrived last week so I will be taking lots of pics soon once I get used to it. For those of you that are interested in cameras it is a Canon EOS 1100D. I have just finished the first book in a set of 6 books for my current Open University module on Western Philosophy with a 1500 word assignment due by Thursday 15th - whoopie do!

My last blog entry was full of woe as it looked like my beloved Arsenal were about to be dumped out of the Capital One cup, but they managed to pull things around and eventually ran out winners 7 - 5............amazing stuff!

Victoria was home for the week recently and took some pretty good pics of a dish we cooked one night. I have entitled it Crisp Italian Chicken with Polenta. In essence 2/3 chicken breasts are cut into 'bite size' pieces and put into an ovenproof dish. Add a 500g pack of ready-to-use polenta crumbled and mixed in with the chicken. Add and mix in 250gms of cherry tomatoes. Sprinkle on the top 25gms of grated grana padano/parmesan cheese, a few springs of rosemary (fresh from our garden, but supermarket will do), salt and pepper to taste and a couple of cloves of garlic (more if like me you adore it). Drizzle over 2 tablespoons of olive oil and bake in the oven for 25/30 minutes on 220C/fan 220C/gas 7. Delicious with a green salad. Ideal for people like me using a Slimming World diet (not sure about other diets), but go easy on the olive oil!
